Before You Begin
You’ll need an established sourdough starter for this course.
Don’t have one? Ask around! Sourdough people love to share their starter. Check with friends, neighbors, or your local community, or post in a neighborhood or Facebook group and ask if anyone has some starter to share.
This course begins with an established starter and will teach you how to feed it, get it active, and use it to make your first loaf.
LESSON 1
Meet & Name Your Sourdough Starter
A sourdough starter is a living culture—and it’s what makes the magic happen.
A few things to know about your starter:
• It’s alive. Your starter is a living culture of wild yeast and beneficial bacteria.
• Yeast makes the bubbles. It produces carbon dioxide, which helps your bread rise.
• Bacteria create the tang. They produce acids that give sourdough its distinctive flavor.
• It needs to be fed. Flour and water keep your starter active and healthy.
• Every starter is a little different. Flour, temperature, feeding routine, and environment all influence it.
Think of your starter as the heart of your sourdough.
